Indian Style Cucumber Sandwiches, and Potato sandwiches.

Here's the ingredients: sandwiches:
2 cucumbers (finely cut) (for the cucumber filling)
1/2 an onion (finely cut, half used for potato sandwich other half used for cucumber sandwiches)
1 quarter of a bell pepper (finely cut) (for the cucumber filling)
1 inch of ginger (finely cut) (for potato masala)
1/4 tomato (removed pulp, only cut the top part) (for the cucumber filling)
1 stick butter partially melted (a tablespoon of it for the cucumber filling) ( 0.4-0.5 cups) (room temperature)
5-6 medium sized potatoes (for the potato sandwiches) (eventually mashed)
2 tablespoons mayonnaise and ketchup for cucumber sandwich filling
OIL (for the pan to make the potato masala) (or as a substitute for the bread)
1 pinch of hing (asafetida) (for the potato masala)
1/2 a teaspoon of jeera (cumin seeds) (for the potato masala)
1 tablespoon of ghee (basically clarified butter) (for the cucumber filling)
1/8th teaspoon of black pepper (for potato masala)
2 finely cut jalapeños (you could use green chilis instead, for the potato masala)
1 teaspoon of red chili powder (for potato masala)
1/4 teaspoon coriander (cilantro) powder (for potato masala)
Salt (depends on your taste, I used 2.5 teaspoons) (for potato masala)
1/2 teaspoon black pepper (for potato masala)
1/2 teaspoon garam masala (for potato masala)
Salt (depends on your taste, I used 1.5 teaspoons) (for the cucumber filling)
Cook the cucumber sandwiches slowly and with them covered.
